Asparagus and Strawberry Salad

Ingredients:
1 bunch fresh asparagus, trimmed
1 cup fresh strawberries, sliced
4 cups mixed greens (like spinach, arugula, or baby lettuce)
1/4 cup crumbled goat cheese or feta
1/4 cup toasted almonds or walnuts
2 tablespoons olive oil
1 tablespoon balsamic vinegar (or a fruity balsamic like strawberry or raspberry)
1 teaspoon honey
Salt and pepper, to taste
Instructions:
Prepare the asparagus: Bring a pot of salted water to a boil. Blanch the asparagus for 2–3 minutes until bright green and just tender. Immediately transfer to a bowl of ice water to stop cooking. Drain and pat dry. Cut into bite-sized pieces.
Make the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
Assemble the salad: In a large bowl, toss the mixed greens with a little bit of the dressing. Top with asparagus pieces, sliced strawberries, goat cheese, and nuts.
Drizzle and serve: Drizzle the remaining dressing over the top and serve immediately.
